Quick Crockpot White Chicken Chili | The Perfect Family Dinner For Fall

I blinked my eyes and fall is now upon us! There is something so special about this time of year with the weather cooling down, but that also means the family schedules have picked up. With so much going on during the week, it can be tough to dedicate a ton of time to dinner.

A classic family staple in our household is my Crockpot white chicken chili. Now that the season finally calls for it, I can’t wait to share the recipe with you all.

Today on the blog, I’ll walk you through every step to making this quick and delicious Crockpot white chicken chili for your next family dinner!

White Chicken Chili Ingredients

  • 4 (14.5 oz) cans of white beans, drained
  • 2 (14.5 oz) cans of white corn, drained
  • 3 cups of chicken broth
  • 2 (4 oz) cans of diced green chilies
  • 2 medium bouillon cubes
  • 2 medium onions, chopped
  • 1 tablespoon of garlic powder
  • 1 tablespoon of oregano
  • 1 tablespoon of cumin
  • ½ tablespoon of cayenne
  • 4 cups of shredded chicken breasts
  • 1 (24 oz) tub of sour cream
  • Optional: limes and parsley to garnish

These are the classic ingredients to our family’s chili, but no good recipe is complete without your own twist! Depending on what your household loves, this classic white chicken chili can easily be altered to account for spice levels, acquired tastes, or just for the picky eaters out there.

White Chicken Chili Directions

When I said quick family dinner- I mean it! It truly only takes 25 minutes to get this delicious white chicken chili on the table for everyone to enjoy.

Start by rinsing both your white beans and white corn in the sink and let each of them drain completely in a strainer. Once completed, throw both into your Crockpot. Next, it’s time to add in the chicken broth and bouillon cubes. I like to mix the broth and cubes together before I pour it in, so the flavor of the bouillon is evenly distributed throughout the whole chili.

Now it’s time to add in all the spices! Throw the garlic powder, oregano, cumin, and cayenne into the Crockpot and let simmer for 5 minutes. This is my favorite part because once everything mixes in with the bouillon broth, it smells just like the cozy chili we all know and love. 

Once the spices have all mixed together, add in the green chilis, onion, and chicken. While I commend anyone that takes the time to cut their own onion, I find this recipe is just as delicious when using frozen onions. Before throwing them into the Crockpot, warm up the onions for 1-2 minutes until room temperature. Now, let everything cook for 15 minutes. 

The final step is here! After your 15 minutes are over, add in the sour cream and stir. Let the chili cook for an additional 5 minutes and now your dinner is ready to enjoy!

How We Enjoy Our Chili

While it’s not a crucial step to the recipe, my family loves to squeeze a lime and add fresh chopped parsley to garnish our chili. It adds the freshest touch we can’t get enough of!
