Easy Recipes: Grilled Teriyaki Chicken Skewers

Yay for Summer! Okay, it’s technically still Spring until June 21st but we are already over 100 degree temperatures here in Arizona and the kids are out of school so as far as we’re concerned, it’s SUMMER! That being said, I’m so excited to share with you this ridiculously easy Summer Recipe, Grilled Teriyaki Chicken Skewers.
Weber Grills asked me if I’d like to try the new Weber Q 1200 portable gas grill, um… yes, please! Then I got to choose which color I wanted. What?? YES! It comes in 6 colors and you bet your bottom dollar I picked Fushia. Yes, my husband rolled his eyes at me. ha! After all, this is Mom’s grill! 😉 Also, can we talk about the stand? The grill is portable and lightweight but if you want it to be up and table height when you’re grilling, it has this amazing stand that collapses and has wheels and a handle so you can just pull it, kind of like a pulley suitcase when you’re all cleaned up and ready to put it away. Obsessed!
Truth: I’ve always been intimidated about grilling on a “real grill” especially a gas grill. I was nervous that I’d do it wrong and somehow the gas would cause some kind of explosion and/or I’d burn my finger tips off. Well I’m happy to report that grilling on this thing is soooo easy! It was my first grilling experience all by myself and it was so easy and the food turned out great! YAY!
This recipe is so easy, my kids could even do all of the prep! Here’s what you do!
Ingredients and Supplies:
Grill – HIGHLY recommend Weber Q 1200
Boneless Skinless Chicken Breasts or Tenderloins, cubed
Fresh Pineapple, cubed
Bell Peppers, cubed (optional)
Onions, sliced (optional)
Teriyaki marinade
Instructions:
1. Soak wooden skewers in water for 20 minutes. I did this while I chopped everything.
2. Immerse cubed chicken into the marinade while you work, longer the better. Do this in the fridge if you’re going to leave it to sit for an extended period of time.
3. Chop, cube or slice pineapple and veggies.
4. Alternating all ingredients, thread all of your food onto the skewers.
5. Grill for 5-6 minutes on each side with the lid closed. I like my veggies to char a bit for some texture.
6. Drizzle with your favorite teriyaki sauce and enjoy!
Grilling poolside might be my most favorite thing this Summer and a portable grill is a must-have for sure! I love that dinner can be fun and unserious when enjoyed by the pool! I can’t wait to take this grill camping too! Genius!
