Crunchy Curry Chicken Salad

Hi Classy Clutter friends! It’s Jen from Yummy Healthy Easy and I’m back with another delicious summer recipe. Do you like chicken salad? One of my favorite lunches on a hot summer day is a huge scoop of homemade chicken salad on a bed of lettuce. Yum!
 
Last week, I had family visitors in town and it had been a hot day so I decided to make this chicken salad for an early dinner. My guests loved it! I served it over lettuce or in croissants and it was a hit! I love this recipe because every bite has crunchy fresh fruit, vegetables or almonds. Plus the dressing is super light and delicious. Along with light mayo, it also has curry, soy sauce and lemon juice giving it a little tang. It pairs so well with the chicken and fruit. Here’s what you need:
 

Crunchy Curry Chicken Salad~

Ingredients:

  • 1-1/2 cups cooked chicken, diced
  • 1 cup red seedless grapes, halved
  • 2 stalks celery, diced
  • 2 green onions, chopped
  • 2 cups apples, diced
  • 1/2 cup slivered almonds
Dressing:
  • 1/2 cup light mayonnaise
  • 1/2 tsp. curry (or more if you like it!)
  • 1/2 tsp. soy sauce
  • 1 Tbsp. lemon juice
  • salt & pepper to taste
Directions:
  1. Combine chicken, fruit, vegetables and almonds together in a large bowl. 
  2. Mix dressing in a small bowl and pour over chicken mixture. Stir to combine. Serve on top a bed of lettuce or in a croissant. Enjoy!

  1. This looks incredible! I recently tried making chicken salad for the first time and my husband said it was “missing” something, so I think I will give your recipe a try!
