Amazing Dinner and Dessert

A group of friends and I do a freezer meal and trade once every few months and this month I made a winner!

This recipe makes a ton! I was able to make 6 freezer meals by only doubling the recipe.
This recipe is for Green Chili Burros
If you are making this for your family I would plan on eating the burros for dinner one night then freezing the rest for a freezer meal.
I wish these pictures were better… but trust me on this one… AMAZING! 

Green Chili Burros
3 1/2 lb to 4 lb beef roast
2 to 3 lb pork roast 
1 large onion
2 large cloves of garlic 
salt and pepper
Put in crock pot with lid and no liquid. Cook on HIGH for 7 hours. One hour before dinner (save 1 cup of juice, pour out the rest) go through meat and remove any fat, bones, etc. Put meat and onion back in, add juice and add the following ingredients:
1 large can diced green chilies 
1 can cream of chicken 
2 small cans of refried beans
2 (19 oz) cans of Las Palmas green enchilada sauce 
Let flavors blend in crock pot for the last hour. Add cheese, sour cream, and greens onions if desired when you roll in tortillas. Or even make nachos!
SO yummy!
Now for dessert 
My cousin went to Utah for peach days and brought me home a box of peach and I made some yummy and easy peach cobbler!
This is one of the easiest recipes I have ever done for a type of cobbler!
This can also be called a dump cake.
I just love the crunchy parts for the brown sugar, its like a crumb on top. 
Peach Crunch Cake
24.5 oz jar of sliced peaches in light syrup
( I used 4 fresh peaches, that were peeled and cut up. Google search how to peel peaches, it was very easy!
for the syrup I mixed up 1 cup water and a tablespoon of sugar)
1 package yellow cake mix

1 stick butter (1/2 cup), cut into 16 pieces
1 cup brown sugar
1/2 cup chopped walnuts
I am not a walnut fan and neither are my kids so I did no walnuts

Preheat oven to 350 degrees F.

Layer ingredients in a 13 X 9 dish, in order starting with the peaches.
Bake for about 40 minutes

  1. Two of my favorite things! Sounds yummy and easy. Love that! I also loved that you called them “burros” because my whole family does and nobody in Utah knows what I’m talking about! Must be an Arizona thing 🙂
