Hi Classy Clutter viewers! My name is Jen Nikolaus and I’m the creator of the blog Yummy Healthy Easy. I have always loved cooking and am so excited to share my recipes with you! I am a stay at home Mom and am completely outnumbered in my home by my husband, Cory and our four crazy boys: Justin, (10) Chance, (7) and my Irish twins, Brock (2) and Tate (1). My favorite room in my house is the kitchen and I enjoy creating yummy, healthy and easy meals for my family!
When Mallory and Savannah asked me to guest post on their blog, I was over the moon with excitement! I started sifting through my huge recipe folder to find the perfect recipe to share. I narrowed it down to 10 different ones. (haha!) But then I got to thinking that I wanted to share a recipe that has been passed down for generations in my family. Immediately, I knew I had to give you this recipe for Country Style Ribs! They are AH-MAZING! They are really easy to make, the meat just falls off the bone when they’re done and the barbecue sauce cooks up to make this really yummy crust that is divine! The coleslaw pairs perfectly with this picnic style meal!

Fork Tender Country Style Ribs:
(my Aunt Cathy’s Father’s Recipe)
5-8 lbs. Country Style Pork Ribs
1 bottle ketchup
2 Tbsp. apple cider vinegar
1 Tbsp. worcestershire sauce
2/3 C. brown sugar
1 tsp. salt
1 tsp. pepper
1/4 tsp. cayenne pepper
2 1/2 tsp. chili powder
1 Tbsp. Liquid Smoke + more for marinating (you can get this at any grocery store)
1 large sweet onion, chopped
Place country style ribs in roasting pan (I use my 9×13) and sprinkle liberally with liquid smoke. Let the ribs sit for one hour so the smokey flavor gets infused. After the hour is up, cook the ribs in a 350 degree oven for 1 hour. While the ribs are in the oven, make the sauce. In a saucepan, add the chopped onion, ketchup, vinegar, worcerstershire, brown sugar, salt, pepper, cayenne, chili powder and the 1 Tbsp. Liquid Smoke. Bring to a boil and then let simmer for at least 15 minutes. This is seriously the best bbq sauce! When the ribs have cooked for one hour, take them out and drain out any excess liquid or fat from the pan before pouring the sauce on top. Cover your pan with foil and turn your oven down to 300 degrees. Cook until “falling off the bone” tender, usually about 3 more hours. I know this sounds like a long process but it’s totally worth it! You can also half the recipe and it still comes out great! I love making this for Father’s Day for my husband or for a yummy Sunday evening meal. Your house will smell amazing!!
Now, for the coleslaw!
(my Aunt Chris’ Recipe)
8 cups (1 head) very finely chopped cabbage
1 medium carrot, shredded – or buy a bag of already chopped cabbage & carrot!
1/3 cup sugar
1/2 tsp. salt
1/8 tsp. pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk*
1 1/2 Tbsp. white vinegar
2 1/2 Tbsp. lemon or lime juice
In a large bowl, place cabbage and carrot. Separately combine sugar, salt, pepper, milk, mayo, buttermilk, vinegar and lemon or lime juice in a small bowl and stir with a wire whisk until creamy. Pour over cabbage and mix well! Cover and refrigerate for several hours so the cabbage gets tender. Makes 8 delicious servings.***Also, quick side note: If you don’t have buttermilk on hand (I almost never do!) mix 1/4 cup milk and 1/4 Tbsp. lemon juice and let sit for 5 minutes. This will make your 1/4 cup homemade buttermilk. I hope you enjoy this yummy meal as much as my family does!
